Fried sage leaves are delicious as a little snack, or great as a garnish.
Prepare a skillet with about an 1/8 of an inch of olive or vegetable oil in the bottom, on medium high heat. Get a plate ready, lined with paper towels to absorb the excess oil from the fried leaves. Remove the stems from the sage leaves, and fry, one or two at a time until they become dark and stiff (see below). Lower the heat if the leaves start to burn at all.
Lay the fried leaves in a single layer on the paper towels and let sit for a few minutes. Sprinkle with kosher salt and serve!
