I rarely buy cold cuts, mainly because I can’t eat them fast enough, but on a whim I got some thinly-sliced roast beef from Fresh Direct. I decided to spice it up a bit and put a little kick in the pants of the old run-of-the-mill beefy ‘wich, by making a delicious lemon and horseradish aioli to go with it.
Aioli Ingredients
- 2 garlic cloves, put through a garlic press
- 1/2 cup mayo
- 1 1/2 T white horseradish
- 1 T lemon juice
- salt and pepper to taste (I just used pepper, actually)
Mix all the ingredients in a small bowl and let sit for a bit for the flavors to meld. Toast up some of your favorite bread, in this case I used some farmers’ market country white I had in the freezer, spread the aioli on as thick as you like, pile on your roast beef, and top with your favorite fresh veggies. For this sandwich, I actually used some leftover arugula salad that was dressed with a lemon/extra virgin olive oil vinaigrette and topped with shaved parmesan. I’m trying to be better about using my leftovers!! It’s working!!
As you can see from the photo below, I also ate the rest of the leftover salad…
