Avocado, Tomato, and Red Onion Bruschetta with Fig Balsamic Vinegar and Fresh Mozzarella

This is one of my favorite snacks and is super simple to pull together.  Slice a fresh or leftover baguette into 1/4 inch pieces, and brush with a mixture of diced, fresh garlic and olive oil.  Place under a broiler until lightly toasted (2-3 minutes on low heat).  Turn the slices over and repeat the process.

 

 

In a bowl, combine some diced avocado, diced tomato, and diced red onion.  Drizzle with fig balsamic vinegar and extra virgin olive oil.  Season to taste with salt and pepper.  Scoop a small amount of the mixture onto each slice of bread, and place under the broiler to gently heat the toppings (about 2 minutes on low heat).  Remove from under the broiler, and place a small slice fresh mozzarella on each piece (freshly grated Parmesan cheese can be substituted for the mozzarella).

 

 

Place the baking sheet back under the broiler until cheese is nicely melted (2-3 minutes on low heat).  Remove and serve!
