I just love using a leftover baguette to make some delicious French Bread Pizzas! I usually like to use fresh mozzarella, but shredded works just fine and happens to be what I have in my fridge. Just throw the leftover baguette into a 400°F oven for six minutes. Let cool and slice in half, lengthwise. In a small bowl, combine some olive oil, diced fresh garlic, salt and pepper.
Using a pastry brush, evenly distribute a light coating of the garlic oil on the top of the halved baguette (as seen below). Toast halves on a baking sheet (with a rack) under a low broiler until lightly toasted.

Next, cut a tomato into 1/4 inch thick slices.
Using a spoon, add a thin layer of your favorite jarred pasta sauce (I used Barilla Tomato and Basil) on top of each baguette half. Lay the tomato slices on top of the sauce.
Next, add a generous helping of shredded mozzarella cheese (or sliced fresh mozzarella). Put pizzas under a low broiler for two – three minutes, until cheese is nicely melted.
