Prosciutto and Goat Cheese Sandwiches

This is just a simple, quick, and delicious sandwich that I made recently:

  • 2 mini ciabatta rolls
  • fig balsamic vinegar
  • 8 slices of prosciutto
  • 1 avocado, pitted and sliced
  • goat cheese (enough to liberally spread on the bottom of each ciabatta roll)

I like to toast the ciabatta rolls whole in the oven for 6 minutes at 400° F to start.  Slice the rolls in half and drizzle the fig balsamic vinegar over the bottom half of the rolls.  It is ideal to use a fig balsamic vinegar that is more viscous, but if yours isn’t very thick, you can whisk in some honey to make it easier to drizzle.  Spread some goat cheese on the bottom half of each roll.  Add four slices of prosciutto and then half of the avocado slices to each.  Serve and enjoy.
